I know there are different ways to make them, I love this recipe because it's very quick and yummy at the same time, I use to eat them together with wurstel, mustard, sauerkraut and roasted pumpkin, awww so deliciousss!
Ingredients: (makes 4)
250 gr. all purpose flour
18gr. sugar
10 gr. brewer's yeast
60 ml water
60 ml whole milk
25 gr. butter
25gr. baking soda
1 teaspoon salt
Combine flour, sugar, butter (melted), water, milk, brewer's yeast in a standing mixer fitted with dough hook (about 6 minutes)
Let it rest for 2 hours covered at room temperature
Mix the dough for 30 seconds then divide it in 4 pieces (about 100 gr each)
To form the bretzel shape, place roll thin sausages then take both ends and cross them over each other twice forming a twist.
Preheat the oven 200 degrees. Bring to a boil 1 litre of water, add 25gr. baking soda and 1 teaspoon of salt. Drop each bretzel for maximum 30 seconds then place them on a baking sheet lined with parchment paper. Brush them with milk and sprinkle with sea salt (I use Himalayan salt). Bake for 15 minutes.
So che ci sono diversi modi per prepararli, adoro questa ricetta perché è molto veloce e buonissima allo stesso tempo, sono ottimi insieme a wurstel, senape, crauti e zucca arrostita
Ingredienti: (per 4 pezzi)
250 gr. Farina tipo 0
18gr. zucchero
10 gr. Lievito di birra
60 ml di acqua
60 ml di latte intero
25 gr. burro
25gr. bicarbonato di sodio
1 cucchiaino di sale
Unire farina, zucchero, burro (sciolto), acqua, latte, lievito di birra in una planetaria dotata di gancio per impastare, lavorare per circa 6 minuti.
Lasciar riposare per 2 ore coperto a temperatura ambiente
Impastare l'impasto per 30 secondi poi dividerlo in 4 pezzi (circa 100 gr l'uno)
Per formare la forma di bretzel, posizionare le salsicce arrotolate sottili quindi prendere entrambe le estremità e incrociarle due volte formando una torsione.
Preriscaldare il forno a 200 gradi. Portare a ebollizione 1 litro d'acqua, aggiungere 25gr. bicarbonato di sodio e 1 cucchiaino di sale. Bollire ogni bretzel per un massimo di 30 secondi, quindi adagiarli su una teglia rivestita con carta da forno. Spennellare con il latte e cospargere con fiocchi di sale marino (io uso il sale dell'Himalaya). Infornate per 15 minuti.
